Broccoli and Cheese Soup still stands as one of my all favorite soups of all times! I’ve been trying to make Homemade Broccoli and Cheese Soup perfect for years and to be honest, I’ve never been a fan of the ones I came up with.
However, this version is fantastic and I love it. I hope you will too!
What you’ll need to make Homemade Broccoli and Cheese Soup:
- butter
- minced garlic
- flour
- garlic powder
- paprika
- pepper
- ground yellow mustard
- chicken broth
- whole milk
- chopped broccoli, steamed
- grated carrots
- shredded cheddar cheese
How do you make broccoli cheese soup from scratch?
In a large pot, add butter and melt on medium heat.
Add minced garlic and sauté for about 3 minutes.
Whisk in flour and stir while cooking for about 3-4 minutes until flour is incorporated into the butter and slightly light brown.
Add in garlic power, paprika, pepper and ground mustard. Whisk together.
Whisk in chicken broth and milk.
Whisk well and bring to a boil.
Reduce to a simmer.
Add in steamed broccoli and carrots.
Cover and simmer on low for 15 minutes.
Uncover, add cheese and stir until cheese is melted.

- Can I use pre-shredded cheese in soup? You can but if you grate the cheese yourself it will melt better.
- How long is broccoli cheese soup good for in the fridge? You can keep this soup in the fridge for 3-4 days.
- Can you reheat broccoli cheese soup? You can! Just reheat the amount you want to eat. Either reheat it on the stove on low heat or in the microwave. The soup will be super thick when cold but will become more creamy once heated.

Ingredients
- 1/2 cup butter

Very disappointed. Followed to a tee, BUT way to much garlic. Couldn’t taste anything but the garlic. Too thick. Will not be trying this again.

Sometimes the garlic in recipes can be over powering to some people. I love garlic so that’s why I add it, my mom on the other hand thinks the tiniest bit of garlic is too much. haha it’s also suppose to be a think soup. I don’t like watery soup broccoli and cheese soup. Sorry that you didn’t like the recipe <3

I have to disagree with the comments from the other person. My husband, son and I thought this was delicious! It does have a garlic taste to it but we like garlic so it was good and not too strong.as for the texture, this soup typically is a thicker base. However, mine wasn’t extremely thick, it was just right. I doubled the recipe. Will make again!
