I just love these Jack-o-lantern Quesadillas, y’all! While I’m out on maternity leave with our new little man, Stephanie from Eat. Drink. Love. has been so sweet to guest post for me today! Since it’s October, you KNOW it had to be a Halloween recipe and I just love this one Halloween Quesadillas that Stephanie made!

Jack-o-lantern Quesadillas

 

Hello Big Bear’s Wife Readers! My name is Stephanie and I blog over at Eat. Drink. Love.. I’m so excited to be here today while Angie is soaking up every precious moment with her baby boy! One of the things Angie and I have in common is our love for all things Halloween. October is my most favorite month of the year and Halloween is the most fun holiday! You don’t have to stress about gifts and all that, it’s just dressing up and trick-or-treating.

I think it’s fair to say though that when it comes to Halloween food, most of the recipes you see out there are for sweet, dessert recipes. Not that I have ANY issues with a delicious dessert, but sometimes you need some fun savory Halloween recipes on hand, especially when the kiddos are eating nothing but sugar! I wanted to create a Halloween-friendly recipe that could also be nutritious for the whole family.
These adorable jack-o-lantern quesadillas (or jackadillas!) are so simple to make, but so adorable at the same time!
Jack-o-lantern Quesadillas
All you need for these guys is some flour tortillas, shredded cheese of your choice (though cheddar fits best with the whole orange thing!), a green bell pepper for your stem, and a knife or tiny cookie or vegetable cutters! I used a serrated knife to “carve” my tortillas, but if you want to get the kids involved in making their own, I’d also recommend something like these small vegetable cutters.

Jack-o-lantern Quesadillas These quesadillas would be perfect to make for a quick lunch or dinner before trick-or-treating. Just serve them up with some salsa and of course, guacamole! Happy Halloween!

Ingredients

  • 6 flour tortillas
  • 2 cups shredded cheese (cheddar, jack, or pepper jack)
  • 1 green bell pepper, seeded and sliced (for stem)

Instructions

  • Preheat oven to 350 degrees.
  • Spray a baking sheet with non-stick spray and set aside. Use a serrated knife or veggie cutters to carve desired face or design on 3 of the tortillas.
  • Place the remaining 3 tortillas in a single layer on the baking sheet.
  • Sprinkle cheese over each one then place the carved tortillas on top of each. Spray with more cooking spray.
  • Bake for about 10-15 minutes until the cheese is melted and the tortillas are golden.
  • Serve with salsa and guacamole.
