Loaded Baked Potato Chowder

A few years ago for Christmas, My parents got me a Starter Kit to become a Pampered Chef Consultant! Let me tell you… I love Pampered Chef and was beyond happy!

My Friend Amy is one of the main reason I fell in love with Pampered Chef! She had a show when I lived at Camp Lejeune, NC and I was hooked.

So when I was preparing to sell Pampered Chef, I started cooking up some of their recipes, and using my husband as a taste tester………….I don’t think complained one bit.

So here is the Loaded Baked Potato Chowder adapted from The Pampered Chef, one of my absolute favorites!

I thought this was very delicious and an over all great chowder for only taking about 30 minutes in the microwave 🙂

What you’ll need:

3 baking potatoes (about 2 1/2 lb)
3 1/2 cups milk
4 oz cream cheese, softened
2 tbsp butter
2 teaspoons onion powder
2 cups shredded cheddar cheese
1 1/2 tsp. salt
1/2 tsp. black pepper

We Also Added Bacon To ours

What to do:


Slice potatoes in half lengthwise.

Place in Deep Covered Baker.

Pour 1/2 cup of the milk over the potatoes and microwave, covered, on for 11 minutes.

Remove Deep Covered Baker from microwave.

Move center potatoes to ends of baker and outer potatoes to center.

Cover and microwave for another 8-11 minutes or until potatoes are easily pierced with a fork.

Remove Deep Covered Baker from microwave.

Coarsely mash potatoes.

Meanwhile, whisk cream cheese until smooth in the Classic Batter Bowl. Slowly add remaining 3 cups of milk, whisking until smooth.

Add cream cheese mixture and butter to Deep Covered Baker.

Microwave, covered, for 3-5 minutes or until mixture is hot. If using onions, slice green onions now. Add the onions to the Deep Covered Baker once you have carefully removed the Deep Covered Baker from the microwave.

Sprinkles with Shredded Cheese and stir until cheese is melted. (this is when I added my Bacon too)
