Macaroni and Cheese Stuffed Potato Skins

TGI FRIDAYS has the best potato skins as far as restaurants go…. well at least I think so anyways. 🙂 Not to mention they have or had fried mac and cheese 🙂 These are two of my favorite things when we get to go there. Now Mind you the closest TGI Fridays is about an hour away, so I MAYBE… and that’s a strong maybe… get to eat there once a year. haha. So why not use some of my favorites and make a new appetizer.

Macaroni and Cheese Stuffed Potato Skins!! Easy to make and very yummy! A rare treat but still delicious.

Macaroni and Cheese Stuffed Potato Skins

What you’ll need:
10 russet potatoes (Or how ever many people you are serving)

Canola Oil
Salt and Pepper
10 slices bacon, cooked and crumbled
1 cups grated  Parmesan cheese
2-3 Cups of your Favorite Mac and Cheese (Box or Home Recipe)

What to do:

Preheat the oven to 400 degrees F.

Poke the potatoes with a fork all the way around each one.

Drizzle Potatoes with canola oil and sprinkle with salt and pepper.

Bake the potatoes for an hour or until they are soft all the way through.

Once cooked, remove from Oven and let the cooked potatoes cool  until you can handle them.

Cut each one lengthwise into 2 halves.

Using a Spoon, scoop the inside of the potatoes out and save the middle for making mashed potatoes

or another recipe.

Leave about a 1/4 inch wall of potato, because you don’t want to rip your potato skins.

Put the potato skins cut side down on a cookie sheet and bake them for about 10 minutes

Meanwhile prepare your macaroni and cheese.

Once the potato skins are crisp remove from the oven and let cool for a few minutes (maybe5 minutes).

Scoop macaroni and cheese in the potato skins. Sprinkle with bacon bits and Parmesan cheese.

Place under the broiler in your oven for about 5 minutes or until the Parmesan cheese is melted.

Remove from Oven and Enjoy 🙂
