Sometimes the most simple recipe can turn out to be some of the most delicious ones in your recipe box. This tasty carrot recipe is the combination of a recipe for parmesan carrots in one of my old cookbooks and my love of garlic and parmesan together.
I managed to save enough carrots from the greedy clutches of the toddler to make these us to have with lunch and they turned out perfectly! If you loved my favorite recipe for Oven Roasted Carrots, you’re going to love this too!
What you’ll need to make Parmesan Garlic Roasted Carrots:
- carrots
- extra virgin olive oil
- garlic powder
- shredded parmesan cheese
- Parsley – Optional for garnish
HOW TO CHOOSE CARROTS AT THE STORE OR FARMER’S MARKET:
- Pick carrots that are bright in color without any green. I used rainbow carrots for this recipe but you can of course use all orange!
- Pick carrots that are firm to the touch. Carrots should not be mushy or rubbery
How to make Parmesan Garlic Roasted Carrots:
Preheat oven to 425.
Wash and Peel Carrots.
Cut carrots in half and then in half again in the opposite directions.
Toss carrots into a bowl.
Drizzle with olive oil and sprinkle garlic and cheese. Mix well.
Spread on baking sheet in a single layer.
Roast on oven for 25 minutes. Check to see if carrots are tender.
If not, continue cooking, check ever 5 minutes until fork tender.
Garnish with parsley. (optional)

- How long dose it take to roast carrots in the oven? At around 425F it should take about 30 minutes, as long as the carrot pieces aren’t too thick.
- Can I use baby carrots? Yes! You can! Just slice them in half longways.
- Does it matter if I use Olive Oil or Extra Virgin Olive Oil? Either one is fine. You could also use avocado oil.
- Do you peel carrots before roasting? You don’t have to. If you don’t want to peel them just make sure to wash and scrub them well to make sure they are clean before chopping them up. I’m not a fan of carrot skins so I prefer to peel mine before roasting them.
- What temperature are these roasted at? This recipe calls for roasting at 425F.
- Can these be made ahead of time? You can make them up to 24 hours or so in advance but you’d need to heat them up for about 20 minutes or so in the oven and these only take 30 minutes to bake to start with haha. You can try reheating them in the microwave (we have for leftovers) but they’re a little more limp after they microwave reheating.
