Pimento Cheese Stuffed Burger

Burgers have always been one of Thomas’ go to foods….well burgers and pizza. If he gets to-go food or drive thru anything for dinner, I can bet that 99% of the time he’s going to be getting a burger.  I like burgers but I have to admit that I’m far more picky about my burgers than Thomas is.

If I’m going to indulge in a burger I need it to be an awesome burger. I’m not interested in regular ol’ fast food burgers and I’m not going to order a burger at a restaurant unless we are having dinner at “Me’s Burgers” downtown. Also, if we’re grilling burgers I’m going to be picky there too. I want it cooked but not burnt, I don’t want a hockey puck that’s trying to pass as a burger.

Also, there needs to be cheese involved. It can be on the burger or in the burger, but it’s got to be there.  So I guess I should say that I love awesome CHEESEburgers…..because I’m not interested in a burger without cheese.

So anyways, this month is #NationalBurgerMonth and my friend Kita from Girl Carnivore (and Pass the Sushi) had rounded up over 40 bloggers to share over the top, epic burgers with you all month long!

Today is my day!

So I mixed in my love of cooking up the perfect cheeseburger and a southern favorite, homemade Pimento Cheese!

Now of course you can run out to the store and buy pimento cheese, however sometimes it’s easy as pie to make things like this at home! If you have time and want to make your own homemade pimento cheese I’ve got a recipe on the blog for it!

If you’d rather not, I’m sure you can find some at the grocery store but to be honest I’d check the little country store down the road before I hit up the big supermarket. You have a better chance of finding some “homemade” pimento cheese there than at the big stores.

Pimento Cheese Stuffed Burger

Pimento Cheese Stuffed Burger

  • Prep Time: 10m
  • Cook Time: 20m
  • Total Time: 30m
  • Serves: 4

Ingredients

  • 2 pounds Ground Beef (I used Certified Angus Beef® brand)
  • 1/2 cup pimento cheese (store bought or homemade, I\'m linking to my pimento cheese recipe above this and below this.
  • Salt
  • Pepper
  • Garlic Powder
  • 4 Burger Buns
  • Burger Toppings - I used Lettuce, Tomatoes and Pickles
  • 2 tablespoons olive oil

Instructions

  • Form the ground beef into 8 thin burger patties.
  • Season each patty with a pinch of salt, pepper and garlic powder.
  • Use your thumb to press a well into the center of each burger patty.
  • Lay out 4 of the burger patties and fill the center of each one with about 1 tablespoon of pimento cheese.
  • Top those patties with the other 4 patties.
  • Press the edges together and use a fork or your fingers to press and seal the edges.
  • Heat 1 tablespoon of olive oil in a skillet, heat it on medium heat.
  • Add the burgers to the pan and cover skillet with a lid. Cook on medium heat for about 10 minutes, flip the burgers, cover and cook for another 10 minutes.
  • --This normally gets up a medium-medium well burger, cook until the burger is done to your liking.
  • Spread a little pimento cheese on the buns and then build your burger.
