Red Velvet is pretty much the Queen of Valentines, wouldn’t you say? Everyone seems to be on the hunt for red and pink desserts this time of year and I’m so excited to share this one with y’all!
Pick a red treat, add some sweet chocolate to it and you’ve got one amazing dessert for your sweetheart. However, I wouldn’t limit these Red Velvet Cookie Cups with Fudge Centers to just Valentines Day! Oh no!
They would be perfect for an Anniversary or for Mothers day! Make them a lighter pink and they would be great for Easter!
Cookie cups have been one of my favorite treats! I started making cookie cups like this to send in care packages back when Thomas was deployed overseas! Ok, the ones I made back then were not red velvet and they didn’t have smooth chocolate centers (because these would have melted haha) but they were the same idea.
I use to make big batches of Chocolate Chip Cookie Cups and package them up in cleaned out Pringles cans. Those got carefully packaged into care packages and shipped out for Thomas to enjoy and share with his buddies.
Since then, I’ve made TONS of cookie cups over the years and recently I even made some cookie cups into cookie pies with these Pecan Pie Cookie Cups, Cherry Pie Cookie Cups and Blueberry Pie Cookie Cups.
These Red Velvet Cookie Cups with Fudge Centers are such a special treat for the Valentines Day. Oh my gosh and that Chocolate Fudge Filling is out of this world, y’all! These cookies came out exactly how I was picturing them in my head when I started working on this recipe and idea.
