Red Velvet Rose Cake

This isn’t my birthday cake but it seems like the most appropriate recipe to post today. Tomorrow is my birthday and while I haven’t made a cake for myself to share I do have this simple red velvet rose cake to post. I made this rose cake for my god-daughter Kendra’s birthday back at the beginning of June so today we’re just going to “share” it. haha

I turn 31 years old tomorrow. While I technically entered into my thirties last year, I consider that a test run. That was a test run year to see how the thirties were going to treat me. Tomorrow I really press forward into the land of 30-something year-olds.

Thankfully though, if this past year was any indication of how my thirties will go, I’m in for a real treat. Of course like most years, there have been some ups and downs. However, the ups far outweigh the downs.

Since last June, we’ve moved into our new apartment downtown, I’ve gone to Chicago, I took a trip to Sandestin, and made multiple trips to Wilmington.Plus, brother finally got engaged!!! haha

Even though tomorrow is my birthday, I’ve got nothing planned. Well, I’m taking the day off from the office, but other than that I don’t have any big plans.

I  suppose Thomas and I will go out to dinner, that’s normally the extend of my wild and crazy birthday’s nowadays. Oh and I’ll probably ditch the low carb diet tomorrow. haha I’m equally dreading that and excited about that. <— I’m a real party animal I tell ya.

So, let’s chat about the cake for a second. It’s a simple cake from a doctored cake mix but I think it turned out pretty nice. 🙂 It’s very similar to the white chocolate birthday cake  that I made for Alyssa (Kendra’s Sister) back in March.

I just went with a red velvet cake instead of whie chocolate. Oh and of course I changed out the purple flowers and pearls for red roses and red dots. Those red accents were Kendra’s request. haha.

I’ve been using this cake recipe for the past 10 years and it always turns out perfect. I’ve used this recipe with white cake mix, yellow cake mix, chocolate cake mix and red velvet, as you see here.

So it’s simple to make, easy to decorate and for an amateur cake maker (cough *me* cough) haha it turned out pretty well.

Red Velvet Rose Cake A doctored Red Velvet cake mix turns into a beautiful three layer Red Velvet Rose Cake in just a few steps!

  • Prep Time: 1h
  • Cook Time: 30m
  • Total Time: 1h 30m
  • Yield: 1 three layer cake

Ingredients

For Cake:

  • 2 box red velvet cake mix (I used the Red Velvet from Betty Crocker)
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 teaspoons salt
  • 8 egg whites
  • 1 1/2 cups water
  • 4 tablespoons vegetable oil
  • 2 cups sour cream (16oz container)
  • 4 teaspoons vanilla

For Icing:

  • 2 cups butter, softened
  • 16 ounces Cream cheese, softened
  • 4 teaspoons vanilla
  • 16 cups powdered sugar + more if desired for thicker icing
  • Red Food Coloring
  • Red Icing Roses

Instructions

For Cake:

  • Pre-heat oven to 350F.
  • In a large bowl, mix together cake mix, flour, sugar, and salt. In the bowl of a mixer, mix together the egg whites and vanilla, water and vanilla.
  • Mix on low for about 10 seconds.
  • Slowly add the dry mix a little at a time.
  • Mixing on low until everything is combined. Add sour cream and mix well.
  • Pour into cake pans and bake for 30 minutes or until done.
  • Remove from oven and cool. --- I used baked this cake in 3 - 8inch cake tins.

For Icing:

  • Cream butter in the bowl of a mixer.
  • Add cream cheese and mix well.
  • Slowly add powdered sugar while mixing.
  • Add vanilla. Whip.
  • Add more powdered sugar for thicker icing or add more milk for thinner icing.
  • Reserve about 1 cup - 1 1/2 cups of frosting for icing border and the flowers if desired.
  • Once cooled, level the cakes if needed but carefully cutting off the rounded tops to make a flat surface. Stack them onto a cake board, adding a layer of frosting in between each layer.
  • Frost the cake with a crumb coat and place into the fridge for 1 hour. Crumb Coat just means, spreading icing all over the cake, gently smoothing it out because it doesn\'t need to be perfect. This is just your base coat.
  • Remove cake from fridge. Finishing frosting the cake and decorate with details. (Save a little icing to tint red for the dots)
  • I piped a boarder around the top and bottom with a Star tip #21.
  • Stick the red candy roses on top. Tint the reserved icing with a little red food coloring and pipe little dots around the sides.

TIP

  • If your piped red dots around the cake have points, just wet your finger or the back of a spoon with a little water and gently press the pointy tip back into the dot.
