Yesterday was my birthday y’all! My 31st birthday to be exact and no I don’t feel any different than I did when I was 30. haha.

I didn’t get on social media at all yesterday and I stayed away from blog work. I really just took the day to relax and unwind.

I spent the morning painting with my new acrylic paint set that my parents bought me for my birthday, I went out to lunch with my best friend Nikki and her girls, Alyssa and Kendra, before coming home at enjoying a scoop of this homemade Thin Mint Ice Cream!

After that, Thomas came home from work, we took dinner to his mom, walked around the mall looking for a birthday present for myself (which I didn’t find anything) and then went home for a lazy relaxing evening just as a huge summer storm started to roll into town.

We were planning on going out to dinner for my birthday but Thomas had to get injections in his back for pain (injury from the military) and well, we figured that going out for a fancy dinner would be better suited for this weekend.

So tomorrow we’re heading to Raleigh for a bit to catch a movie and have dinner.  We’re totally exciting people, I know you’re jealous. 😉 haha

However, with all of this “birthday excitement” going on around here, I wanted to take a second this morning before work to get this recipe ready for the blog.

Although I did share a slice of cookie cake from the mall with Thomas, I didn’t actually have a birthday cake this year. However, that’s totally ok. I decided that instead of a cake, I would have Thin Mint Ice Cream as my birthday treat!

Thomas bought these thin mints for me about a week or so ago (even though he knows I’ve trying to be good with my diet! Darn him!!) and I’ve been great about having one or two every couple of days. However, those little sweets were tempting me big time.

What’s the best way to use them up without just binge eating them on the couch?

Answer? Crush them up and turn them into easy homemade Thin Mint ice cream! BAM – You’re welcome! Now come over and help me eat this ice cream!

Thin Mint Ice Cream – No Churn Ice Cream –

Thin Mint Ice Cream - No Churn Ice Cream - No churn Thin Mint Ice Cream that's made with Thin Mint Girl Scout Cookies! You don't need an ice cream maker for this Ice Cream.

  • Prep Time: 10m
  • Total Time: 7h
  • Yield: 1 LOAF PAN FULL OF ICE CREAM

Ingredients

  • 2 cups heavy cream (1 pint)
  • 1 tablespoon vanilla
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup Thin Mint coffee creamer (optional)
  • 14 thin mints, coarsely chopped (about 1 sleeve of thin mint cookies)
  • 5 -6 thin mints, coarsely chopped FOR THE TOP

Instructions

  • Add the heavy cream and vanilla to the bowl of a stand mixer.
  • (Or pour into a large bowl and use an electric mixer).
  • Whip heavy cream, thin mint creamer and vanilla together a few minutes until stiff peaks form.
  • Add in the sweetened condensed milk and whisk until combined.
  • Fold the thin mint cookies
  • Spoon mixture into a loaf pan.
  • Top with the rest of the cookies.
  • Freeze for several hours or overnight until frozen.
  • **NOTE/TIP** - a glass loaf pan will work but a metal one will freeze the ice cream better.

    I love the idea of celebrating with ice cream, because as much as I love cake, I love ice cream even more… especially when it’s in mint-chocolate form, which is my favouritest ice cream flavour of all!
