Why don’t I ever think to make meals like this at home for dinner? Well I mean I obviously do sometimes or this post wouldn’t be here, but I need to do it more often. I always feel like dinner should be one of those “wow” meals of the day but sometimes simple is better. And as far as sandwiches for dinner go, they normally have to be awesome subs like this or I feel like I’m cheating myself out of a good meal. A piece of cold ham with some mayo on white bread just doesn’t work for me as a dinner. Not that there is anything wrong with it, it’s just not for me. I need flavor in my life and in my meals!
KRAFT has given me a challenge! They asked me (and some other great bloggers) to come up with some great meal ideas using their Fresh Take breadcrumb and cheese mixes! My variety for the challenge is their Rosemary and Roasted Garlic!
Garlic is by far one of my favorite flavors so I was pretty excited to get that kind! When BigBear and I were first working on this idea, I was worried that all of the different flavors on this sandwich would mask the Rosemary and Roasted Garlic from the Kraft Fresh Take, but I was wrong. The Rosemary and Roasted Garlic was the most prominent flavor that I tasted! YAY!
Onto the subs! These beauties are piled high with some of my favorite things. Chicken, pasta Sauce, mushrooms, basil, tomatoes, mozzarella and Parmesan cheese turns this into a huge and filling meal.
We made homemade sweet potato chips to go along with the sandwiches and let me tell you, after half of the sandwich and a few chips I was stuffed.
What you’ll need:
1 pack of KRAFT Fresh Take Rosemary and Roasted Garlic
Chicken Breast tenderloins
1 egg + 1 tablespoon of water, whisked
Mushrooms** (if you don’t want raw mushrooms, saute in a little olive oil)
Basil**
Tomatoes**
Parmesan pasta sauce**
Parmesan and Mozzerella cheese**
Sub Rolls
Sweet Potatoes and Vegetable Oil if you want sweet potato chips
**(amount varies, depends on what you like)
To make Rosemary Garlic Chicken:
Pre-heat oven to 350F.
Whisk 1 egg and 1 tablespoon of water in a bowl.
Pour breadcrumbs and cheese mix into a bowl. In video below, I poured breadcrumbs into one and cheese into another just to give a visual.
Cup the Chicken Breast tenderloins in half. Dip each one into the egg mixture and then into the Rosemary and Roasted Garlic Fresh Take breadcrumb and cheese mix.
Place chicken onto a sheet tray. Bake at 350F for 20-25 minutes.
To assemble subs:
Slice sub rolls open and lay flat. Add chicken bites and cover chicken with pasta sauce.
Add mushrooms, strips of basil and slices of tomatoes.
Lastly, add the cheese.
I served these with homemade sweet potato chips. Just peel and slice a few sweet potatoes, heat oil in a large skillet and fry until crispy. Remove from oil and drain on a paper towel. Add a little black pepper and salt to them while they are hot for added flavor!
That is all it take to make a Rosemary and Roasted Garlic Parmesan Chicken Sub. They were perfect for dinner and I even made one to take for lunch the next day (I kept the chicken separate heated it the next day at lunch and added it to my sandwich)
