Do you remember those Strawberry Crunch Ice Cream bars that were full of strawberry flavor and had the vanilla strawberry crunch topping all over them?
These are the cookie version of those fantastic Strawberry Crunch Ice Cream bars! I also like to call the Strawberry Shortcake Cookies.
Why You Should Make this Strawberry Crunch Cookies…

Ingredients For Strawberry Crunch Cookies:
- unsalted butter
- white sugar
- light brown sugar
- eggs
- strawberry extract
- red or pink liquid food coloring
- all-purpose flour
- baking soda
- salt
Topping
- Golden Oreos
- strawberry Jello powder
- unsalted butter

How To Make Strawberry Crunch Cookies:
- Make the topping
Roughly crush Golden Oreos and pour into a bowl.

Mix in strawberry Jello powder and melted butter.

Stir well. Pour onto a plate and spread into a single layer.

- Preheat oven
Preheat oven to 350°F.
- Make Cookie Batter
In a mixer, cream together butter and both sugars.
Add eggs, one at a time. Make sure each egg is incorporated before adding next. - Make them pink and strawberry
Add in strawberry extract. Mix well.
Whisk in red or pink food coloring. -
Whisk together flour, baking soda, and salt in a large bowl.
With mixer on low, slowly add flour mixture to batter. Mix until just combined. - Scoop and Roll
Scoop dough into a round tablespoon and roll in crushed cookie mix.

- Bake Cookies round 1
Place cookies on a prepared baking sheet a few inches apart as cookies will spread.
Bake for 8 minutes.
- 2nd bake
Remove from oven and sprinkle crushed cookie mix on tops of cookies.
Return to oven and bake for another 4 minutes.
- Cool Cookies
Remove cookies from oven and let cool completely.

Can I use regular OREOS instead of Golden Oreos?
You can but your cookies will have a bit of a chocolate flavor.

- 3/4 cup white sugar
- 3/4 cups light brown sugar
- 2 eggs, room temperature
- 1 teaspoon strawberry extract
- 15 drops red or pink liquid food coloring
- 2 2/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Topping
- 20 Golden Oreos
- 1 box (3.4 oz) strawberry Jello powder
- 4 tablespoons butter, melted

hi is there a reason for dixie sugar or can I use any kind of granulated sugar and brown sugar

Store them in and airtight container and they should be good for a week or 2. I haven’t had them longer than a few days haha

Nope. Just leave them whole.

Hey! Yes, you can use any white sugar for this recipe. I did create this recipe for Dixie Crystals, so that is why I listed their sugar in the recipe 🙂
The flavor of the cookies were very good. The cookies had more of a cakey texture. I prefer cookies that are on the chewy side. I am an avid baker, as I have a home bakery. I tried to not bake them as long, but still had the cake texture. I tried to drop the pan on the counter to get them to deflate, and they still did not flatten out. Would still make again because the flavor is great and my preference may not be everyone else’s preference. I took a picture to post but don’t see an option to attach the photo.

I froze the cookies and felt they froze well.

I made these cookies with blended dried strawberries instead of jello and left out the red food coloring (my friend is allergic to coloring), and they turned out delicious! Very strong strawberry flavor and stays crunchy for days in a Tupperware Thank you for the recipe!

Don’t see an amount for the butter for the topping

Strawberry Jello but in powder form. Not made into wiggly Jello
so you have the nutrition info on this cookie… ie calories, fat… etc
