White Chocolate Oatmeal Cookies

My husband, BigBear, banned me from making sweets a few weeks ago. We’re going to Disney soon and one way to cut down on our calories and start to feel better is to cut down on sweets and junk.

But I’m determined to use up the stuff in my kitchen instead of just tossing it. I just can’t toss food into the trash. I just can’t do it. So since I’ve already bought this stuff and since I love to bake, I made a compromise. I’ll keep getting to bake, we can both taste test and then I have to give the rest of the cookies, cupcakes or whatever away.

 

It’s working out pretty good for us. Well.. it’s working out for me. haha. I’m perfectly content with baking a batch of cookies, tasting one and then packing them up for them to go to a new home.

BigBear… not so much.  HAHA

I was tired and starving the other night, so silly me decided that I need to make risotto. Risotto .. something that has to be tended to and stirred for like 30 minutes. What was I doing? Trying to punish myself? Don’t get me wrong, I LOVE risotto, but it’s not something to make when you’re tired and your stomach is yelling for food.


But there I stood making risotto. Then finally after 30-40 minutes I had risotto. Sat down to eat it and I wasn’t hungry. “Ahhhhhhhhhhhhh”. I spent all that time cooking it, with my stomach growling, holding my eyes open (ok really I sat my tablet up and was watching Alice in Wonderland to keep myself awake) and then after all of that work, I was so tired that I didn’t even want to eat.

 

That made me mad, so then I was awake because I was mad. Who knows why in the world I was mad, it was just one of THOSE days. So what did I do to calm myself down? I made cookies. haha.

Because that’s what normal people do right? No? Oh.. ok.. welll, It works, so that’s all that matters.

 

As I was baking the second or third batch, BigBear came into the kitchen and started stealing them from the cooling racks. He made the no sweets rule, and he’s the one breaking it. I had already sat out my little containers to package them up and everything and there he goes eating them. Well, he’ll be at the gym working off those cookies, not me 🙂

And what did he think of these cookies “Best Dang cookie ever!” Yes, he loved them and finally I had to cut him off from the cooling rack or he would have ate every last one! Normally he likes cookies, but I don’t ever think I’ve seen him attack cookies like this. haha. He says I have to make a whole batch of them for him as an “Easter Present” haha.

These cookies are the adapted version of the “Vanishing Oatmeal Raisin Cookie” recipe found under the lid of my can of Quaker Oats Oatmeal. I didn’t even know there was a recipe under there until the other day.

 

I don’t keep raisins around much so my Easter White Chocolate M&M’s took their place and I added a little more vanilla and brown sugar to them. BigBear says they are the perfect texture and the pop of creamy white chocolate is what makes them so good.

White Chocolate M&M Oatmeal Cookies

Adapted version of the “Vanishing Oatmeal Raisin Cookie” recipe found under the lid of my can of Quaker Oats Oatmeal
Ingredients
1.5 sticks of butter, softened
1/2 cup white sugar
1 cup brown sugar
2 eggs
2 teaspoon vanilla
1.5 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 cups uncooked oats
1 bag white chocolate M&Ms (or white chocolate chips)
 
Instructions 
Pre-heat oven to 350F.
In a large bowl, cream the butter and the sugars.
Add in the eggs and the vanilla, mix well.
In another large bowl, mix together the flour, baking soda, salt and mix well. Slowly, add to butter and sugar mixture. Mix well.
Add in the oats and mix well. Add in the white chocolate M&Ms and mix.
Drop tablespoon sized balls of dough onto a cookie sheet and bake for 8-9 minutes.
Remove from over, pat down with the back of a spatula and move to a cooling rack.
Makes: about 30 cookies
