Let me show you just how easy and fun it is to whip up these hauntingly delicious brookie cups with sugar cookie ghost cookies!
My little boy and my nephews LOVE the little Pillsbury Sugar Cookies that come out for the holidays. This year, there were ghost and pumpkin sugar cookie designs!
We’ve spent a few evenings together baking the little cookies because my son loves the little designs and loves “baking” them in the kitchen with mommy.
However, I thought I’d add a little bit too them with some brownies and turn them into Brookie Cups! Brownies and Cookies = Brookies.
So grab your apron and let’s get into the spooky spirit!
Ingredients For Halloween Pillsbury Ghost Sugar Cookie Brookie Cups:
- 1 (18-ounce) box of fudge brownie mix
- 1/4 cup water
- 1/3 cup vegetable oil
- 1 egg
- 2 packages of refrigerated Pillsbury Ghost Sugar Cookies*
*you don’t have to use the ghost. You could also use the pumpkins for Halloween or ANY other design for other holidays.

How To Make Halloween Pillsbury Ghost Sugar Cookie Brookie Cups:

Preheat oven to 350F.

Open Pillsbury Ghost Sugar Cookies.

Place cupcake liners in a cupcake pan.

Add 1 Pillsbury Ghost Sugar Cookie dough square to the bottom of the liner.

In a bowl, combine brownie mix, water, oil, and egg. Mix well until smooth.

Fill cupcake liners 1/2 way with brownie batter.

Add 1 Pillsbury Ghost Sugar Cookie dough square to the top of the batter on each brownie cupcake.

Bake for 18-25 minutes.

Remove from oven and let cool.

Each Brookie cup will have a cookie on the bottom, a brownie center, and a cookie on top!
What Are Refrigerated Pillsbury Ghost Sugar Cookies?
Each season and holiday, Pillsbury makes holiday-themed Pillsbury cookies that are refrigerated cookie dough with fun designs on them.
Over the years for Halloween, I’ve seen, black cats, ghosts, and pumpkins. However, this year I didn’t see the black cat design, just the ghost and pumpkins.
My son is crazy over them and he grabbed a few boxes of Pillsbury Halloween cookies the first time he saw them this year.
Do I Need To Bake The Pillsbury Sugar Cookie Dough First?
Nope! They’ll bake with the brownie batter.
