These tasty BBQ Pineapple Chicken Sandwiches are just another great way to enjoy BBQ Pineapple chicken!
I made these at the beach for the family and everyone loved them. They’re based off of the BBQ Pineapple Chicken Tacos that I posted a few weeks ago!
If you read about the BBQ Pineapple Chicken Tacos that I made, you’ll know that I fell in love with the way Katerina makes her BBQ Pineapple chicken on her blog, “Diethood”. While you can of course serve it up like she does as is, I’ve love turning that simple chicken dish into tacos and sandwiches!
What you’ll need for BBQ Pineapple Chicken Sandwiches:
- olive oil
- boneless, skinless chicken breasts
- black pepper
- BBQ Sauce (I used Brown Sugar BBQ Sauce) – I’ve also used Stubbs BBQ sauce for this recipe and it’s awesome
- fresh diced pineapple (or 20oz can diced pineapples, drained)
Couldn’t be easier!
This pineapple BBQ chicken couldn’t be easier to make! Just toss the chicken into an olive oil coated casserole dish, sprinkle it with salt and pepper, pour on some tasty BBQ sauce and top it with diced pineapples before baking it!
Once it’s baked it’s time to shred!
After the chicken is done, just shred it and pile it high on a tasty bun for a fantastic BBQ Pineapple Chicken Sandwich that’s great for lunch or dinner!
- Can I use any kind of BBQ Sauce?
Yep! I’ve tried this with Brown Sugar BBQ sauce and Regular. Both were delicious. You can also use homemade BBQ Sauce.
- Can I use chicken thighs?
You can! You may need to adjust the cooking time a bit. Just make sure the chicken is done before shredding it for the tacos.
