Cake Mix cookies have become my “go” too cookie recipe lately when I’m in the kitchen with my 2 year old, Jackson. These cookies only take a few ingredients, they don’t require an electric mixer and Jackson loves to help me pour in the chips and sprinkles!
What you’ll need to make Confetti Birthday Cake Mix Cookie:
- white cake mix
- eggs
- vegetable oil
- vanilla extract
- confetti baking chips
- rainbow sprinkles
What makes these Confetti Birthday Cake Mix Cookies awesome?
First of all, these cookies are mixed, baked and done in under 30 minutes. Secondly, they taste just like cookie version of funfetti icing thanks to the extra vanilla, confetti baking chips and fun sprinkles!
I found these confetti baking chips with the regular chocolate chips in the baking section at the grocery store. If you can’t find these you can also use white chocolate chips for these Birthday cake cookies.
Sprinkles are a must!
Ok, ok, you don’t HAVE to have sprinkles. But the rainbow sprinkles sure do make these Confetti Birthday Cookies extra beautiful!
You can find rainbow sprinkles at most grocery stores but if you want to order some online here are some good options from my favorite sprinkle company:

Cake Mix Cookie Dough:
Cookie dough made from cake batter is going to be a little softer than normal cookie dough BUT it shouldn’t be like liquid. So make sure you’re NOT following the cake direction on the box or you’re going to end up with a cake and not cookies.
I used a medium cookie scoop, which is about 2 tablespoons, to make my cookies and they’re the perfect size.
Cookie decorating tip!
Once all of the cookie dough has been added to the baking sheet, stick a few more confetti baking chips into the tops of the cookie dough before baking! We eat with our eyes first, so we want these cookies to be as beautiful as they can be.
You can also sprinkle on a few more rainbow sprinkles before they go into the oven as well.
Bake time!
Bake these cookies in a preheated oven at 350F for about 10 minutes and then take them out to cool.
Don’t leave them in there too much longer or they’ll start to brown a little too much. Don’t worry if they look a little puffy and underdone. They’ll keep cooking for a bit on the cookie pan while they’re cooling and they’ll deflate a bit too.
