Caramel Bunny Peanut Butter Brownies Stack

Oh Brownies! Brownies are pretty great on their own but they’re even better when they have a generous layer of peanut butter stuffed into the middle of each bite!

Not only are these Caramel Bunny Peanut Butter Brownies stuffed with a nice peanut butter layer but they’re also topped with mini chocolate caramel bunnies.

Sweet heavens! Does it get any better than that?

Until a couple of years ago I was loyal to boxed brownie mix and that was all I ever made.  I still love using a fudgy brownie mix when I make quick, fun brownies like my Melted Witch Brownies or my Spooky Eyeball Fudge Brownies but sometimes I need the brownie flavor to really shine and that’s when I turn to homemade brownie recipe like the one I used for these Caramel Bunny Peanut Butter Brownies.

Now the recipe I used for these Caramel Bunny Peanut Butter Brownies is amazing without the peanut butter layer in middle, but they’re extra delicious with it added in. When you make this brownie recipe with the peanut butter layer in them, every bite taste like a fancy chocolate and peanut butter truffle! Oh it’s perfection!

Oh and those little chocolate caramel bunnies on top of the brownie? I made those and I have a tutorial on the blog for them BUT if you don’t want to make your own just pick up a little pack of chocolate bunnies at the store!

  • These brownies can be made in an 8×8 or a 9×9 pan – the 9×9 pan will be just slightly thiner
  • Make sure to line the baking dish with foil or parchment paper for easy removal.
  • Let the brownie cool a little before adding chocolate bunnies OR add them as soon as they come out of the oven, let those melt and then add more on top of those once they cool for EXTRA chocolate/caramel goodness on top.

Caramel Bunny Peanut Butter Brownies

Caramel Bunny Peanut Butter Brownies Peanut Butter Stuffed Chocolate Brownies with a chocolate caramel bunny melted on top, what’s not to love? These Caramel Bunny Peanut Butter Brownies are the perfect addition to any Easter dessert spread!

  • Prep Time: 15m
  • Cook Time: 30m
  • Total Time: 45m
  • Yield: 9 Brownies

Ingredients

Peanut Butter Filling:

  • 1/4 cup unsalted butter
  • 6 tablespoons smooth peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

For Brownies

  • 10 tablespoons unsalted butter cut into small pieces
  • 3/4 cup unsweetened cocoa powder
  • 1 1/4 cups granulated sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 9 caramel filled chocolate bunnies (I made my own, link to that recipe above!)

Instructions

Peanut Butter Filling:

  • In a medium sauce pan, melt the butter and peanut butter together over medium heat.
  • Once the butter and peanut butter is melted pour it into another large bowl.
  • Stir in the vanilla.
  • Stir in the powdered sugar until well combined.
  • Place into fridge for 30 minutes.

For Brownies:

  • Preheat oven to 325F.
  • Line a 8x8 square baking pan with parchment paper or foil with overlapping ends (this will make it easier to remove the brownies later).
  • In a large bowl, combine the diced butter, sugar and cocoa powder.
  • Stick the bowl into the microwave and heat for 30 seconds.
  • Stir the mixture and then microwave for another 30 seconds
  • Let the chocolate mixture cool slightly.
  • When the chocolate mixture is has cooled a bit but is still warm, stir in the vanilla and salt.
  • Next, stir in the 2 eggs.
  • Mix in the the flour to the batter until completely incorporated.
  • Stir for 1 minute, about 50-60 stirs.
  • Add 1/4 of the brownie batter to the 8x8 lined pan and spread it evenly on the bottom of he pan.
  • Add the peanut butter mixture. Take small amounts of the peanut butter dough and press it flat in your hands, then place it into the batter. Cover the batter with a flat layer of the peanut butter mixture but leave about 1/2 inch of uncovered brownie batter along the edges.
  • Spoon the rest of the brownie batter over the peanut butter layer.
  • Bake for 25 -30 minutes.
  • When done, the top should be dry, the edges firm and the middle just slightly jiggly.
  • Let brownies cool slightly and then press the chocolate caramel bunnies into the top of the brownies.
  • Don't place the bunnies on there as soon as it comes out of the oven, the will melt!
  • However, if you want extra melted chocolate and caramel on each brownie, place chocolate bunnies onto brownies, evenly, as soon as they come out of the oven. After those bunnies melt and the brownie had cooled, press more bunnies into the brownies on top of the melted brownies.

    My favorite Easter dessert is carrot cake with a fat layer of cream cheese frosting. I don’t even like frosting, but on this cake, it works! The caramel bunnies are my favorite part of this brownie. I’m sure they’re a big hit!

    Goodness, those brownies look so good! I would have to say my favorite Easter dessert ever is my Nana’s coconut cake. She sadly passed away in 2016 so I miss hers, specifically, so much!

    My favorite Easter Dessert is Bunny Cake…..The Face, ears and bow tie. It has been a family tradition, for 58 years! This year is a Bunny Cake with banana cake , buttermilk glaze on the layers and a buttercream frosting!

    YUMMMM – I was already in love with these brownies just from the top view, but the cross-section had me swooning. Lol! I absolutely must try this recipe. As to what my favorite Easter Dessert is – I love lemon and almond themed desserts, as they’re so spring-y to me! I have a recipe for thick lemon bars that use a generous amount of almond extract in the shortbread crust – love making those when there are a lot of people over for Easter!

      Oooo those lemon bars sounds amazing with that shortbread crust! My husband loves shortbread cookies, so I bet he’d be crazy about those bars! Also, YAY! haha I’m so glad you like the brownies! I hope you get to give them a try soon!
