Our little boy turned 4 months old last Saturday! Ahh, I can’t believe it, y’all! I just don’t feel like it’s been 4 months already! Time is flying by way too fast! Oh my sweet little bear  is just the cutest and I’m loving every moment I have with him!

Thank heavens that I get to stay at home with him during the day and see his little milestones too. He rolled all the way over for the first time on Saturday on his play mat and I’m so glad I got to see that!

Here we go! Cheesy Shredded BBQ Chicken Sandwiches!

They’re easy, they’re done in about 35 minutes and they’re pretty darn tasty! I made a whole batch of them again today for Thomas to take to the office with him. Oh they’re going to be eating good today for lunch.

These Cheesy Shredded BBQ Chicken Sandwiches couldn’t be simpler. You just toss a few ingredients into a pot, add some flattened chicken breasts to the sauce, let it cook, shred it up and pile it high on some lovely hamburger buns.

Easy Peasy, right? RIGHT!

Oh and you’re going to want to serve these sandwiches with a nice, big ol’ helping of easy cheesy mac and cheese too!

Cheesy Shredded BBQ Chicken Sandwiches

 

  • Flatten the chicken breasts before you cook them. This will make sure that they cook evenly while in the sauce & it’ll make sure they cook completely in the 20 minutes.
  • You don’t have to use giant hamburger buns, these would be great served on small Hawaiian rolls or butter biscuits
  • You could also use rotisserie chicken for this! Just let the sauce simmer for about 15 minutes, shred the rotisserie chicken and toss it in, letting it simmer until hot

Cheesy Shredded BBQ Chicken Sandwiches

  • Prep Time: 5m
  • Cook Time: 30m
  • Total Time: 35m
  • Yield: 6 servings

Ingredients

  • 1 jar RAGÚ® Old World Style® Traditional Sauce (24oz)
  • 3 tablespoons firmly packed brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 1/2 tablespoons chili powder
  • 2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 2 boneless, skinless chicken breast, sliced in half
  • 6 hamburger buns
  • 1/2 cup shredded cheese

Instructions

  • In a large pot, combine the sauce, brown sugar, vinegar, chili powder, garlic powder and onion powder.
  • Heat over medium heat for 5 minutes, stirring occasionally.
  • Lay down a piece of plastic wrap or parchment paper onto a flat surface. Lay the chicken halves down and then cover with another piece of plastic wrap or parchment paper. Using a meat tenderizer or skillet, flatten the chicken breasts.
  • Season chicken, if desired, with salt and pepper. Add chicken to sauce. Reduce heat to medium-low and simmer covered, stirring occasionally, until chicken is thoroughly cooked, about 20 minutes.
  • Remove saucepan from heat.
  • Remove chicken from sauce and shred chicken using two forks.
  • Return shredded chicken to sauce and heat.
  • To serve, arrange chicken mixture on rolls , top BBQ with shredded Cheddar cheese.

    Meals like this are always a hit at our house. Our little Jax is a big four and a half now and it’s still fun to watch them learn and grow… and luckily he still cuddles with his mommy! 😉
