Life is amazing y’all and at the exact same time it’s hard as heck. I’m sure you already knew that but it just felt good to get it off my chest.  I’ve been doing so good with my low carb meals and resisting my urge to snack on stuff but life y’all, it’s got me mentally reaching for tubs of ice cream and shots of whiskey…mentally y’all not for real.

Ok, that’s only half true, I have reached for the ice cream once or twice this past month…..ok three times. So sue me. haha

I’m all about homemade ice cream right now!

As much as I want to whine and cry about the bad stuff I’m pretty sure that you could care less bahaha so I’m not even going to go in that direction. Let’s just jump on over to the awesome stuff, like this ice cream.

Well, like this Ice Cream AND the fact that I’ll be heading to Florida in 21 days for the Sandestin Food and Wine Festival! Ekkk I’m so excited. The Hilton in Sandestin contacted me the the other day and invited me down to check out the Food and Wine Festival as well as the Hilton! I can’t wait  to share it all with y’all!

Anywho, let’s get onto it. I know you’re just ready for the ice cream. It’s ok, I get it. If there was a beautiful bowl of cookies and cream ice cream sitting in front of my face I wouldn’t be able to concentrate on anything else either. I forgive you. I know you’re really just here for the ice cream. haha

I’ve really gotten into these no churn ice creams lately. If you come to my house, I am almost bet you money that there will be a pan of homemade ice cream in the freezer nowadays.

This is my most recent homemade ice cream recipe, plus I’ve already posted about Batman (Banana Chocolate) Ice Cream and the Easter M&M ice cream already! I’ve got a whole list of ice cream flavors in the works and I’m so excited to show them to you!

Cookies and Cream Ice Cream fan? Look no further! This will take you less than 10 minutes to whip up and then you’ll just need to pop it into the freezer for  a little bit! That’s all the work that stands between you and this Cookies and Cream Ice Cream!!

Cookies and Cream Ice Cream

Cookies and Cream Ice Cream

Cookies and Cream Ice Cream (2) Love Cookies and Cream ice cream? Now you can make it at home without an ice cream machine!

  • Prep Time: 10m
  • Total Time: 7h
  • Yield: 1 loaf pan full of ice cream
  • Category: dessert, Ice Cream

Ingredients

  • 2 cups heavy cream (1 pint)
  • 1 tablespoon vanilla
  • 1 (14 oz) can sweet condensed milk
  • 30 chocolate sandwich cookies, coarsley chopped
  • 10 -15 chocolate sandwich cookies, chopped into quarters FOR THE TOP

Instructions

  • Add the heavy cream and vanilla to the bowl of a stand mixer. (Or pour into a large bowl and use an electric mixer).
  • Whip heavy cream and vanilla together a few minutes until stiff peaks form.
  • Add in the sweetened condensed milk and whisk until combined.
  • Fold the roughly chopped cookie chunks.
  • Spoon mixture into a loaf pan.
  • Top with the rest of the cookies.
  • Freeze for several hours or over night until frozen.
  • **NOTE/TIP** - a glass loaf pan will work but a metal one will freeze the ice cream better.

    Homemade ice cream is one of the favorite things my daughter and I love to make together especially since we dont need a machine. Cookies and Cream you cant beat!

    That festival looks like it’s going to be so much fun! They’ve been running ads here in Orlando for it for weeks. And this ice cream looks so delicious! I could use a big bowl of it right now!

    Anytime we go out for ice cream, 99% of the time I get cookies and cream. The fact that I can now make this at home (no-churn too!) is dangerously good!

    This is basically our go-to ice cream recipe since all 3 of my kids love cookies ‘n cream the most (and no-churn is so simple). That festival sounds like fun!

    Life is amazing and hard – there is so much truth in this. Very timely to read this on your blog, I have been pondering the same thoughts a lot lately. Sounds like you’re doing great with your low-carb diet! It gets easier if you stick to it, so don’t give up 🙂 I love no-machine ice cream recipes! This one looks absolutely fantastic! I so want to try it out!

    Dude, ice cream is my weakness! I could eat it every single night! After we eat dinner I’m always like “hey, wanna go to McDonalds and get ice cream cones” hahaha. I wish I had this homemade goodness in my freezer right now.
