Sometimes I just think that we put too much pressure on ourselves to make cute food for every holiday. I know mom’s that just feel like they fail at life if they can’t make adorable lunches for their kids and holiday themed snacks that are Pinterest worthy!

That’s crazy, I tell ya! Crazy!

My mom didn’t go all super cutesy all the time with our foods and we turned out just fine haha.

Saint Patrick’s Day is the perfect opportunity to bring a little more “green” into the world.

Plus, who wouldn’t have fun decorating these Saint Patrick’s Day Cookie Stacks! (PS. NO NEED TO BAKE COOKIES EITHER)

These cookies are just one of those desserts that I like to make for almost any holiday. It’s like a cookie and a cupcake rolled into one. Layers of icing, soft chocolate chip cookies and pretty sprinkles, what’s not to love?!?

Saint Patrick’s Day Cookie Stacks

No need to go super crazy with the St. Patricks Day treats! Sometimes, simple is best! These no bake Saint Patrick’s Day Cookie Stacks are easy to decorate and fun to eat!

  • Yield: 4-6 Saint Patrick's Day Cookie Stacks

Ingredients

  • 24 Soft Chips Ahoy Cookies (or homemade)
  • 1 can white frosting (or homemade)
  • 1 can green frosting (or homemade)
  • Green, White and Yellow Sprinkles (Or St. Patrick\'s Day Sprinkles)

Instructions

  • To get the two toned icing, open a piping bag that has been fitted with a large flower or star tip. Fill one side of the bag with green icing and the other side of the bag with white. Close bag and Squeeze.Place 1 cookie in a cupcake liner or on a plate. Top with frosting. Top frosting with another cookie, add another layer of frosting. Continue layering cookies and icing until the cookie stack had reached four cookies high.
  • Top with another swirl of icing and then top with decorative sprinkles
