Did you ever get into Taco Tuesdays? I always thought it was a fun idea and I always see people posting about making tacos on Tuesdays or #tacotuesday but I have to admit that I NEVER remember to make tacos on Tuesday. haha. I’m always like making them on a Thursday or a Sunday, I’m so, so bad about keeping up with trends and stuff.
I’m also not very adventures when it comes to my tacos. When I was growing up, I was a strict “ground beef and cheese only” kinda person when it came to tacos. Later on in life I started adding lettuce and it wasn’t until about 2 years ago that I changed that up. Thomas and I went up to Roanoke for one of this veteran hospital appointments and we stopped at a little taco place downtown for lunch, it was the first time I tried fish and shrimp tacos!
Not that I’ve really expanded my taco horizons too much but at least I’ve moved on to adding shrimp, guacamole and tomatoes to them!
Quick Glance at ingredients for Shrimp Tacos: (amounts in recipe card below)
- Extra Virgin Olive Oil
- ears of corn
- large shrimp, shell and vein removed
- seasoning salt
- tomatoes, diced
- shredded lettuce

Lately I’ve also been adding grilled corn to them! Grilled corn, seasoned shrimp, tomatoes, lettuce and guacamole….what’s not to love? I mean it’s pretty much summer time in a taco!
I mean, I love corn and I could probably eat shrimp every day, so I’m really going to have to control myself when it comes to these Shrimp and Grilled Corn Tacos!
How many tacos is too many tacos? Or is that a thing? Can there be too many tacos?
Thomas would probably say NO.
So let’s chat about this The Sabra Southwestern Veggie Fusions guacamole really quick. The Sabra Southwestern Veggie Fusions guacamole is perfect with on these Shrimp and Grilled Corn Tacos!
Y’all know I’ve been working with Sabra over the past few months and they’re hummus is fantastic but wait until you get to check out the new guacamole flavors.
Sabra just introduced a new product called Veggie Fusions!
It’s pretty much the perfect combination of avocado and vegetables.
There are three varieties:
You should be able to find these in the deli section of your local grocery store.
The new Sabra Veggie Fusions guacamoles are made with real crisp vegetables: 7 different varieties per recipe, they are 30% less fat than a classic guacamole.
I got to try all three flavors and while they’re all really good, I absolutely love the southwestern for these Shrimp and Grilled Corn Tacos.
How to make Shrimp Tacos – Shrimp and Grilled Corn Tacos
Now these are pretty easy to toss together. I think the longest part of the whole process is grilling the corn. I know everyone is breaking out their grills right now, so toss a few ears of corn on there for these tacos or just char your corn up a little bit in a super hot skillet on the stove.
The shrimp cooks up in just about 2-3 minutes and then all you’ve got to do is assemble your tacos!
Remove husk and silk from corn cobs.
Heat olive oil in a medium skillet on medium high heat Add corn, turning every so often until corn is charred to your liking.
Once corn is cooked, remove corn from skillet and add the peeled shrimp to the hot skillet.
Sprinkle the shrimp with the seasoning salt.
Keep cooking shrimp and stirring until shrimp is done. Shrimp will curl up and turn pink when done.
Remove shrimp from skillet.
Carefully cut corn kernels from corn cubs.
Build your Shrimp Tacos:
Add shredded lettuce and diced tomatoes to taco shell.

Shrimp and Grilled Corn Tacos
Easy Shrimp and Grilled Corn Tacos that pretty much scream summer! Grilled corn, seasoned shrimp and your favorite fillings make for one perfect taco meal!
Ingredients
- 2 tablespoons Extra Virgin Olive Oil
- 3 ears of corn
- 24 large shrimp, shell and vein removed
- 1/4 teaspoon seasoning salt
- 2 large tomatoes, diced
- 2 cups shredded lettuce
- 7 ounces container Sabra Southwestern Veggie Fusion Guacamole
- 8 taco shells
Instructions
