Last Saturday I sent Thomas to the store with a very specific grocery list. I had a plan. I was going to make enough meals on Sunday to last us for the whole week and I wanted to be able to go the entire week without spending a penny on food.
I’m proud to say that we succeeded! Friday evening we did opt to eat out (Pizza for Thomas and Sushi for me) but technically we could have eaten one of the freezer meals and not spent any money on Friday. But I figured that since we went Sunday-Thursday without spending a dime on food that we could splurge a bit on Friday.

On Sunday I made about 7 freezer meals for our deep freezer. I made 2 freezer bags of ham and pineapple, 2 bags of chicken poppers, 2 bags of Southwest Chicken Tacos, and 1 bag of Slow Cooker Braised Short Ribs. That is the recipe that I’m sharing with you today. (We carried left overs for lunch and already had breakfast foods at home, so that’s how we managed to stick to not spending any money).
I was a little nervous about these ribs when I first put the freezer bag together on Sunday. I’ve never been very good at cooking beef. That’s always been Thomas’ department. But I wanted to give it a shot and I knew that he would love them if I could get them to come out right. Let me just tell you something, they were amazing! I don’t meant to toot my own horn, but dang they were good. They literally fell off the bone as I was trying to take them out of the slow cooker. (Our dogs were pretty happy to have a little stack of bones haha)
I felt like these ribs would be perfect to share today because our #SundaySupper theme is all about movies and the food that they inspire. I picked Brave. It’s a new Disney movie in case you aren’t familiar with it. Princess Merida is the newest Disney princess and she is the star of the movie Brave. If you’ve seen this movie you’ll remember that her family has a bit of connection with “bears” haha which is perfect since I’m married to my big bear.
I can just imagine her family sitting down to feast on these! In the movie it looks like they’re eating meat and potatoes so I think that these Ribs piled onto of some homemade mashed potatoes would fit right in!
Oh and here’s another reason I love Princess Merida, she reminds me of me. haha. I have an Scottish/Irish background (probably more Scottish than Irish) and I totally use to have curly orange/red hair.
This is me as a baby, probably 2 or 3 maybe? I had orange/red hair, yep and as it grew longer and longer it got curlier and curlier and stayed red for the longest time.
I also love that Merida has red hair and blue eyes haha, I always tell Thomas that when we have kids, I want redheaded babies with either green or blue eyes. 🙂

Slow Cooker Braised Short Ribs
Ready to make one of the most popular recipes on BigBearsWife.com. These Slow Cooker Braised Short Ribs are always a hit! This is the best beef short ribs recipe in my opinion.
Ingredients
- 3 -4 pounds beef short ribs
- 4 tablespoons honey
- 4 tablespoons Worcestershire sauce
- 15 ounces tomato sauce
- 2 cups beef broth
- 1/2 tablespoon onion powder
- 3 cloves garlic, minced
- 2 tablespoons coconut oil (or regular oil)
- 1 teaspoon pepper
- 1 teaspoon sea salt
- 2 -4 sprigs fresh thyme
Instructions
- Sprinkle the short ribs with salt, pepper and onion powder. In large pan over medium-high heat, melt the coconut oil.
- Once the coconut oil is melted, add the short ribs.
- Cook on for 3-4 minutes or until browned. Flip and cook the other side for 3-4 minutes or brown. Remove from pan and set aside.
- Add garlic to the pan and cook for 1 minute or until fragrant. Pour into a small bowl and set aside.
- In medium-large bowl mix together the broth, tomato sauce, Worcestershire sauce, and honey. Whisk to combine.
- If cooking right away: Add ribs, broth mixture and cooked garlic to the bowl of a slow cooker. Add thyme. Cook on low for 7-9 hours.
- If making this into a freezer meal: Place the short ribs into a large gallon sized freezer bag, add in the broth mixture, cooked garlic and thyme.
- Place into freezer and freeze. When ready to cook, add everything to a slow cooker and cook on low for 7-9 hours.
- I served ours on top of a bed of garlic mashed potatoes and along side steamed broccoli.

I wouldn’t recommend it. The best way to get fall off the bone ribs is to cook them low and slow. I added a few glugs of Cabernet about 3/4 of the way through cooking because I thought the sauce was sweeter than I expected. I also used Vegetable broth instead of Beef cause that is what I had, but I added a package of Concentrated Beef Stock to make up for that. But these might have made the flavor different enough that I needed to add the wine. Or maybe I just like mine more acidic. 🙂

Hi, I made the frozen version, tossed in slow cooker on low for 9 hours. The sauce was delicious but I expected the meat to flake apart with a fork and it wasn’t at all. Where did I go wrong? I seared the meat, let it rest, etc.. But that can’t be how the meat comes out, right? Help. SOS!

Hi Victor! How did the ribs turn out? I know you said they didn’t flake apart but I need a little more detail on how they actually turned out. When I made this, the meat is tender and normally always falls off the bone (unless I end up with tough rib meat from the butcher which has happened to me on occasion). It doesn’t flake like fish though, it’s somewhere between pulled pork and super tender stew beef if that makes since.

Made this last night for the first time for company, which is a bit risky, but everyone loved it! Just made these for dinner tonight. Oh my gosh! Soooooo good! The honey was a surprise ingredient, and it rounded out all the flavors. Nice touch! Had a large shallot on hand that needed to be used up, so I coarsely chopped that and sautéed with the garlic, so I omitted the onion powder. Didn’t want all the delicious brown bits in the pan to go to waste, so I left the garlic and shallot in the pan, poured the beef broth in, scraped up the bits, added the rest of the sauce ingredients and mixed it all right in the pan. One less bowl to clean. Thanks for this recipe. I’ll be making this again and again!

hey! I have never cooked it on high but I wouldn’t recommend cooking it on high. It’s best to cook it low and slow to make sure the ribs are tender.

I did ‘sub’ some ingredients because I didn’t have tomato sauce. I did have Enchilada red sauce so I used it.

Hi! I have a different short rib recipe in the oven right now… I LOVE them but almost never make them. I decided to look for a slow cooker recipe, and came across yours! SUPER excited to see that not only is this a slow cooker recipe, but a freezer meal too!!!! I LOVE making freezer meals so that I have something ready to toss in the oven/crockpot when I don’t have time to prep and cook! We have multiple freezers (hunting family) so freezer space isn’t an issue. Can’t wait to try this… looks amazing! Thank you! I don’t thaw them before hand. They cook for almost 8 or 9 hours so I’ve never had an issue with tossing everything in frozen 🙂

OMG!!! I think my husband loves me even more after he devoured almost my entire pot of ribs. The only thing that I could here him say in between bites was “What is this? It’s sooo good” lol. I tweaked the recipe just a little by increasing the salt, pepper, and onion powder just a tad and also I used olive oil. This was a last minute meal and I didn’t have 7 hours to slow cook so I cooled on high for about 4.5 hours and they fell right off of the bone. Thank you for the new addition to my family lol

If you’re just adding a pound or 2 I would maybe add 30 or 45 minutes but not too much longer. I would probably start checking them after 8 hours but they would probably be done by then. I’m actually making that amount on Sunday for dinner so I’ll let you know how mine does.

I made these short ribs tonight and they were fab!! The meat fell off the bone and they were flavored nicely. Only thing is the sauce was too thin. I was hoping for thicker sauce at the end to pour over the ribs and potatoes. What could I do different next time? There will be a next time!!

Next time, once you’ve removed the meat, just add a little cornstarch to the juice and whisk it to thicken it. That should thicken it up. 🙂 I’ve never even thought to pour the juice over the ribs and potatoes since they’re normally super juicy when I take them out. But that’s a great idea!!

Hi! I have these in the slow cooker now and the sauce seems super watery and not like a thick bbq style sauce like a thought. Your picture makes them seem saucy but mine is watery and doesnt stick to the ribs. Did i do something wrong??

Hi Stacey. It’s not suppose to be thick. It just cooks the ribs, it doesn’t stick to the ribs like BBQ sauce. However if you want a thicker sauce to pour over them you can add a little cornstarch to the liquid after you remove the ribs and whisk it up.

This was delicious. I did season a little more to my taste. 1 extra tablespoons of honey and Worcester a little extra salt a dash of cayenne and 2. Beef cubes. My boyfriend asked if he could like the plate. Definitely serve mash potatoes and apple pie.

These were great as written (only reduced honey by 1 tbsp.). It’ll be my go-to recipe for short ribs. My hubby is a gravy guy so after separating the fat from the liquid, I poured the liquid into a sauce pan and boiled it down to a gravy consistency for serving. Thanks!!

Really enjoyed this! Only change was adding a bay leaf along with the thyme. I cooked these on Christmas Eve, let them sit, then reheated for Christmas dinner to let the flavors develop (and I skimmed the fat lol). Served with Parmesan black pepper grits and broccoli. Fantastic!

Has anyone actually made this recipe? All the ones I’ve read commented on how wonderful the recipe “sounds” or “looks” but can’t find anyone comment on the actual taste or make any suggestions.
