It’s another cookie cup recipe! I’m so glad that y’all are loving these. I’ve been getting lots of comment, e-mails and messages from y’all about them with some great flavor suggestions and I can’t wait to work on them!

Today is all about Bailey’s Cookie Cups! St. Patrick’s Day is coming up and I thought this would be the perfect little dessert for y’all this week!

These cookie cups use the same wonderful sugar cookie crust that my blueberry pie cookie cups and chocolate pie cookie cups use.  Then they’re filled with a tasty homemade Bailey’s Irish Cream chocolate frosting. Oh they’re so good.

So here is a little tip that I shared with y’all when I made my Bourbon Pecan Pie, if you’re not one to have lot of liquor or alcohol in the house, buy airplane bottles at the ABC store for baking and desserts!

YES! Don’t go out and buy a giant bottle of bourbon or whiskey or whatever a recipe calls for if you know you’re never going to drink the rest of it.

I’m not a big drinker but I so like to bake with bourbon, whiskey and Bailey’s once in a while. But since I’m probbaly not going to drink much if any of the bottle after I bake with it and I don’t really want to take up space in my freezer, fridge or panty of big bottles,  it doesn’t make sense for me to buy a giant bottle of liquor at the ABC store.

That’s why I buy the airplane sized bottles for my baking. You normally get 2-3 tablespoons in each bottle and that normally exactly what I need for a recipe. If I need to double it, I just buy two little bottles. $3-$4 is a lot better than $20. 🙂

Also, if you don’t want to use Bailey’s Irish Cream you can totally try to make these with the Bailey’s coffee creamer for a version that contains no alcohol all.  Just use the in the recipe the same as the Bailey’s Irish Cream.

  • Make these with Bailey’s coffee creamer for a version that contains no alcohol all.
  • Sprinkles are optinal
  • Make sure you butter the muffin pan really well so that the cookie cups come out good.

    This recipe was supposed to the Grilled chicken penne al fresco but it pulls up the Bailey’s cups! I searched Pinterest and every one of them pulls this Baileys up! I really want to try the Grilled Chicken penne, can you help! Thanks Angie from Angie

    These cookie cups look amazing. I love how cute they are.

    OMG, life-changing suggestion on buying small bottles of alcohol. I am not a drinker either and I hate spending big bucks when I want to eat my alcohol. Ha.
