My father in law has always been the potato salad master in the family. That was until my husband, Thomas, got into the kitchen this past weekend and decided to spend some time working on perfecting his own recipe. I think Thomas has won the gold medal with this potato salad.
Thomas calls this masterpiece recipe, “Potato Salad Try #2381”, but I’m calling it “Paprika Deviled Egg Potato Salad”! Whatever you call it is fine but you’ve got to give it a try! It combines our favorite Deviled Egg recipe and his love for the perfect potato salad into one fantastic southern side dish!
What you’ll need to make Paprika Deviled Egg Potato Salad:
- Yukon gold potatoes
- eggs
- mayo
- pickle relish
- garlic power
- onion powder
- yellow mustard
- paprika
What kind of potatoes to use for Potato Salad:
I’ve seen potato salad recipes made with all kinds of potatoes. There are recipes made with russet potatoes, like the ones you use for baked potatoes, and I’ve seen recipes made with red potatoes.
While I’m normally a russet potato fan when it comes to potato salad, Thomas loved Yukon gold potatoes and that’s what we’re been using lately for a lot of our recipes.
Yukon Golds are smaller than baking potato and they turn super creamy when they’re boiled which makes them perfect for potato salad.
Hard Boiled Egg shortcut:
If you don’t like cooking boiled eggs at home, buy them pre-boiled from the grocery store. A lot of times you can find hard boiled eggs in the egg section or the deli section of the grocery store. You can store them in the fridge and just chop them up when you’re ready to make this potato salad.

This potato salad contains mayo, so it can sit out for a little while (30 minutes or so) but if serving at a cookout or picnic, try to keep it chilled just as you would pasta salad.
