Can I Use Baby Carrots or Frozen Carrots For This recipe?
I prefer to use whole carrots for this recipe but my husband liked to make his brown sugar candied carrots with baby carrots. I think it’s all a personal preference. You can of course, also make these using frozen sliced carrots or steamtable sliced carrots! if you use the steamtable bags of sliced carrots, you can skip the option of steaming the carrots in the skillet of water.
Can You Make Candied Carrots Ahead Of Time?
You sure can! While I think they’re best right from the stove stop, we make them and enjoy leftovers for a day or so afterwards. Just make them, let them cool and then store them in an airtight container (in the refrigerator) . Then just heat them up when you need them.
How To Make Candied Carrots:
-
You’re going to need a medium skillet for these carrots and preferably one with a lid.
-
Makes sure the carrots are peels, washed and chopped into coins.
-
Toss water and carrots into skillet. Try to get them in a someone single layer in the skillet.
Cover and simmer carrots on medium-high heat for 10-15 minutes.
Drain Water. -
Add butter, brown sugar and salt to the hot skillet. Don’t add a lot of salt. We’re only going to be adding about 1 teaspoon salt to bring out the sweetness of the carrots. This is our easy brown sugar glaze!
-
Reduce heat to medium. Stir Cover and simmer 5 minutes.
-
Remove cover, simmer on medium heat, uncovered for 15-20 minutes.
Stir occasionally until glaze / sauce is golden and slightly thickened.
Carrots should be fork tender at this point. -
Remove from heat.
-
Garnish is fresh parsley (optional)
Best served hot, warm or at room temperature.
How To Store Leftover Candied Carrots:
Store them in an airtight container in the fridge. They should be good for 2-3 days.
