Summers have a whole new meaning for me now that I’m a mom. I use to just enjoy them because they meant that the pools were open and beach trips were going to be happening a few times over the next few weeks. Now though I’m trying to enjoy every single day with my little bear and Thomas while making lots of memories.

A lot of those memories this summer have been involving ice cream and I’m 100% ok with that. Some of those memories include these Mint Chocolate Chip Ice Cream Bites!

Today is the beginning of this year’s #SummerDessertWeek too, so that’s another reason that I’m sharing these Mint Chocolate Chip Ice Cream Bites with y’all. This week is going to be full of great summertime dessert recipes that y’all are going to love.

Back to these Mint Chocolate Chip Ice Cream Bites though! They are so simple to make, y’all.

  • Ice Cream
  • Chocolate Sandwich Cookies
  • Coconut Oil
  • Chocolate Chips

That’s all you need to whip up a batch of these tasty frozen bites.

I picked Mint Chocolate Chip Ice Cream for these since it’s one of Thomas’ favorite flavors but you can really use any ice cream with these bites.

I’ve got a bunch of great ice cream recipes on the blog, like Strawberry Cheesecake, Unicorn Ice Cream, and Peanut Butter that y’all might like to try with these ice cream bites!

I’ve got the recipe for y’all below and I’ve got two different methods for making these as well.

Either one will work, it just depends on how you want to make them. Just remember that it is ice cream so you’ll want to work quickly when making these!

Mint Chocolate Chip Ice Cream Bites Recipe

Mint Chocolate Chip Ice Cream Bites These Mint Chocolate Chip Ice Cream Bites are easy little bites of chocolate coated ice cream. These bites can be made with homemade or storebought ice cream, however, making them with storebought ice cream makes them super easy to make! Change up the flavor of ice cream too for even more dessert fun!

  • Yield: 12-16 bites

Ingredients

  • 1 cup mint chocolate chip ice cream, softened
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil
  • 15 -20 chocolate sandwich cookies, crushed
  • Silicone Ice Cube Mold OR 8x8 Baking Pan
  • Plastic Wrap & Parchment Paper

Instructions

I'm Sharing TWO methods for making these ice cream bites

    Method #1:

    • Press plastic wrap into each cavity of a Silicone Ice Cube Mold. Scoop semi-soft ice cream into each cavity of a Silicone Ice Cube Mold, pressing it down a bit.
    • Set aside 3 or 4 tablespoons of crushed cookies.
    • Press the rest of the crushed cookies into a layer on top of the ice cream in each mold.
    • Place into the freezer for 2-3 hours or until frozen.
    • When ready to dip them, pour the chocolate chips into a medium glass bowl.
    • Add the coconut oil and stir.
    • Place bowl into the microwave for 2 minutes, stirring after every thirty seconds.
    • Keep heating and stirring until chocolate is melted and smooth.
    • Working quickly, ice cream squares from mold and plastic.
    • The crushed cookies should be on the bottoms of each bite.
    • Dip them one by one into the chocolate with a fork and then place them onto a piece of parchment paper.
    • BEFORE the chocolate hardens, sprinkle crushed cookies onto the tops of each. Chocolate will harden quickly.
    • Once the chocolate hardens, place ice cream bites into an airtight container and keep in freezer until ready to enjoy!

    Method #2:

    • Lay a piece of plastic wrap into a 8x8 pan.
    • Scoop soft ice cream into the pan on top of the plastic wrap.
    • Smooth ice cream flat. (Add more ice cream if you want them thicker) If you make them too thick you may need more chocolate to coat them.
    • Set aside 3 or 4 tablespoons of crushed cookies.
    • Press the rest of the crushed cookies into a layer ontop of the ice cream.
    • Place into the freezer for 2-3 hours or until frozen.
    • When ready to dip them, pour the chocolate chips into a medium glass bowl.
    • Add the coconut oil and stir.
    • Place bowl into the microwave for 2 minutes, stirring after every thirty seconds.
    • Keep heating and stirring until chocolate is melted and smooth.
    • Working quickly, remove the ice cream from the pan with the plastic wrap. Place on a cutting board and cut into small squares. Remove plastic.
    • The crushed cookies should be on the bottoms of each bite when you dip them.
    • Dip them one by one into the chocolate with a fork and then place them onto a piece of parchment paper.
    • BEFORE the chocolate hardens, sprinkle crushed cookies onto the tops of each. Chocolate will harden
    • Once the chocolate hardens, place ice cream bites into an airtight container and keep in freezer until ready to enjoy!

      These look S-O good!! For little mouths I’ll bet some silicone molds of the youngling’s favorite characters would be great. The details might not be great but they won’t care, trust me!! I bought a Star Wars set last year to make cookies for my grown guys who grew up with all things Star Wars. I’ve also used them for ice cubes for fun.
