These Mint Chocolate Chip Ice Cream Bites are easy little bites of chocolate coated ice cream. These bites can be made with homemade or storebought ice cream, however, making them with storebought ice cream makes them super easy to make! Change up the flavor of ice cream too for even more dessert fun!

Summers have a whole new meaning for me now that I’m a mom. I use to just enjoy them because they meant that the pools were open and beach trips were going to be happening a few times over the next few weeks. Now though I’m trying to enjoy every single day with my little bear and Thomas while making lots of memories.

That’s all you need to whip up a batch of these tasty frozen bites.
I picked Mint Chocolate Chip Ice Cream for these since it’s one of Thomas’ favorite flavors but you can really use any ice cream with these bites.

I’ve got the recipe for y’all below and I’ve got two different methods for making these as well.
Either one will work, it just depends on how you want to make them. Just remember that it is ice cream so you’ll want to work quickly when making these!

These look S-O good!! For little mouths I’ll bet some silicone molds of the youngling’s favorite characters would be great. The details might not be great but they won’t care, trust me!! I bought a Star Wars set last year to make cookies for my grown guys who grew up with all things Star Wars. I’ve also used them for ice cubes for fun.
