This Baked Pizza Mozzarella Stuffed Chicken might be one of the best baked chicken recipes ever. It was originally just going to be baked chicken with mozzarella cheese stuffed into the middle but after a little brainstorming and pantry digging, it came out even better as planned.
I hadn’t planned on naming it Baked Pizza Mozzarella Stuffed Chicken either…
When Thomas got home from work, he walked in and said, “Are you making pizza? I thought we were having chicken. Is it pizza chicken?” haha So the Pizza name was added in and pizza chicken it what we call it now. 🙂
What you’ll need for Baked Pizza Mozzarella Stuffed Chicken:
- mozzarella cheese
- Italian Seasoning
- Chicken Seasoning
- chopped mushrooms
- marinara sauce
- Dried Parsley
- Optional Pasta for side dish
What kind of chicken do I use for Baked Pizza Mozzarella Stuffed Chicken?
This recipe calls for boneless, skinless chicken breast. You’ll need to use chicken breasts in order to have enough meat to cut open and stuff with mozzarella cheese.
The chicken breasts that I got were a bit on the thick side so I just flattened them a bit before I sliced a pocket into them.
You can use a rolling pin or your hand to flatten them.
Tip – Lay the chicken between two pieces of plastic wrap to keep things clean.
What can I use in place of mushrooms?
Use your favorite pizza toppings! I love mushrooms on pizza so that’s what I used for this recipe. However you could use all kinds of toppings!
- Green peppers
- Cooked Sausage
- Cooked Bacon
- Grilled Onions
- Black Olives
What kind of cheese should I use for this Pizza Chicken?
I would suggest shredded mozzarella. It melts well and it’s just delizioso! Plus, what’s pizza without mozzarella!
How long do I bake this Mozzarella Stuffed Chicken?
I baked this cheesy stuffed chicken for 40 minutes at 400F. I am terrified of raw chicken so I also use a meat thermometer to check it. Chicken should reach at least 165F in the thickest part when done.
What should I serve with this?
I served this with pasta last time I made it. You could also serve it with a big salad or homemade garlic bread!
